What's In Season: Citrus

As spring fully blossoms, it’s the perfect time to embrace the bright and refreshing flavors that come with the season. This March, we're celebrating citrus in all its glory, bringing you a deliciously zesty cake and a signature cocktail to match.

Tum Tum crafted a cake that perfectly encapsulates the freshness of citrus. Our March cake features a citrus olive oil sponge, topped with a velvety white chocolate mascarpone whip, blood orange caramel, and a smooth vanilla bean buttercream. The result? A cake that’s light, fragrant, and full of vibrant flavors that are perfect for the season.

Tessa of Tum Tum explains, “Citrus season is a lovely time of year when more than just lemons and oranges are available. There’s tangerines, clementines, blood oranges, kumquats, finer limes, etc. The options are endless, and they can make for some really fun and unforgettable cake combinations.” With such a bounty of citrus to choose from, the possibilities for flavor pairings are exciting—and this cake is just the beginning!

To complement the refreshing citrus notes in our cake, we’ve also created the perfect springtime sip: the Grapefruit Basil Gin cocktail. The combination of fresh grapefruit, aromatic basil, and crisp gin makes for a drink that’s light, invigorating, and a true celebration of the season.

Ingredients:

4-6 fresh basil leaves

1 oz simple syrup

 2 oz gin

1.5 oz grapefruit juice

1/2 oz lime juice

Garnish:Grapefruit wedge



In a cocktail shaker

add basil and 1oz simple syrup and muddle

Add 2 gin, 1.5 grapefruit juice and ½ oz lime juice

Add ice to shaker and shake

Add large ice cube to rocks glass and strain shaken mixture over fresh ice

Top with soda water

Garnish with grapefruit wedge
